Keen on quinoa
This salad packs a nutritional punch and makes for a filling lunch. Mix with cooked and cooled quinoa some baby spinach leaves, freshly-cut avocado, roasted sweet potato, spinach and chickpeas.
Easy-peasy pasta salad
Cook and cool whole wheat fusilli pasta. Into it mix halved cherry tomatoes, lightly steamed broccoli florets, pitted black olives, and chunks of cheese feta.

A simple salmon salad
On a generous amount of your choice of green leaves, place avocado and tomato with some chilled smoked salmon. Sprinkle with sesame seeds or chives and freshly squeezed lemon. Serve with cream cheese and crackers if you want to do something extra.

This salad dresses up kale beautifully for a good-looking lunch. Roughly chop washed raw kale and mix with quinoa. Sprinkle a generous amount of cranberries for a sweet burst of flavour, and some whole or crushed almonds for a protein crunch.

This is an easy salad to put together at the last minute. Mix beans of your choice (we like black beans the most), chopped up avocado, corn and red bell pepper.
